Terroir and Vineyard Management: Arid, stony, clay and limestone soil. The vines are all farmed biodynamically, certified by Demeter. The earth is ploughed and absolutely no fertilizer is used.
Yield: 30 hectolitres/hectare.
Harvest: Hand-picked solely in the morning, into small open crates.
Vinification: Pneumatic pressing, light cold settling. No yeast added. Fermentation in stainless steel vats at medium temperature.
Maturing: 6 months. Bottled in February 2021.
Production: 7,800 bottles.
Serving suggestions: serve between 12 and 14°C.
At its peak: 2022-2026.
